This recipe is so good. Its going to be your favorite meal ever. To make this delicious dish, you don’t need to be a top chef. It is very easy to make! But first let’s talk about sweet potatoes.

Sweet Potatoes

Sweet potatoes also called Ilpomoea Batatas is a root crop.  Love that name. They have a rich history and an interesting origin. It is the oldest vegetables known to mankind. They come from Central America. It was Christopher Columbus who took sweet potatoes back home to Europe. Sweet Potato is from a plant family called (flowering plants) the Morningglory. The English word potato is from the word batata (sweet potato) and in Spanish patata. The sweet potato is long and tapered, with a smooth skin whose color ranges between yellow, orange, red, brown, purple, and beige. This sweet potato is often called yam in parts of North America. The word yam is probably from nyami an language from the West African Wolof people, slaves who were brought to the New World. They used the word yam for the native sweet potato. This plant grows it best at an average temperature of 24 degrees Celsius, with abundant sunshine and warm nights.

Nutrition

The sweet potato is one of the most nutrition vegetables there is. They are rich in dietary fiber, vitamin A, vitamin C, and vitamin B6. The sweet potato ranked highest in nutritional value. They have protein, vitamins, iron and calcium. They have more or less sweet flavor. So this potato is very good for you. The potato is most frequently boiled, fried, or baked. This vegetables is cheap, and easy to incorporate into your diet.

Step 1. Preparing the sweet potatoes

Preheat the oven to 300 degrees. Wash the sweet potatoes and prick all over with a fork. Place them in a oven pan and bake for 50-60 minutes. Until they are tender. When the potatoes are done let them cool for 5-10 minutes and cut in half.

Step 2. Preparing the chicken breast

Rub the chicken breast with a tablespoon of olive oil, salt and pepper. Place the chicken in a baking dish with the potatoes and bake for 25 minutes. When the chicken is cooked and cool down shred the chicken into a bowl.

Step 3. Making the Hot Sauce

Take a medium-size bowl and make the Hot Sauce with olive oil, garlic, oregano, chili powder, salt, pepper and ketjap sauce. Set aside.

step 4. Spinach

Heat and welt the spinach and add it to the chicken bowl (together).

Step 5. The potatoes flesh

Scrap the sweet potatoes out of the peel, not all of it. Leave a medium size layer of flesh in the peel.

Step 6. Mix

Mix the spinach, potato flesh and chicken with the Hot Sauce together.

Step 7. Stuffing/filling

Stuff the potatoes with the Hot chicken mixture and on top the shredded cheese if you like. Bake for 10 minutes, until the cheese has melted and the skins of the potatoes are hot and crisp.

This is a great healthy meal you can eat for lunch or dinner.

  • 1/4 cup olive oil
  • 4 tsp ketjap sauce
  • 3 gloves garlic
  • 2 tsp dried oregano
  • 3 tsp chili powder
  • salt
  • pepper
  • 5 cups spinach
  • 5 onces cheddar cheese/grated

Instructies

  • Step 1.

    Mix the spinach, potato flesh and chicken with the Hot Sauce together.
  • Step 7.
    Stuff the potatoes with the hot chicken, spinach mixture and on top shredded cheese if you like. Bake for 10 minutes, until the cheese has melted and the potatoes skins are hot and crisp.
